Choc Cookies

Preheat the oven to 180°C
Line tray with baking paper.

  • 250g butter
  • 255g brown sugar
  • 2 eggs
  • 2 tsp vanilla exract
  • 150g self-raising flour
  • 1 1/2 cups oats
  • 250g chocolate, chopped

In a large bowl, mix in the butter and brown sugar until they're nice and creamy.

Add eggs one at a time, mixing thoroughly in between. Add in vanilla and mix.

Mix in the flour.

Add in oats and chocolate and stir with spatula. Be sure not to mix it all thoroughly because we want the gooey chocolatey texture when biting into the cookies.

Once mixed, divide the mixture and shape it into balls with your finger and place I onto the tray leaving some space between them because they will expand. If your mixture is too gooey, feel free to add in some more flour.

Bake for 12 minutes and let it rest.
